Monthly recipes using produce harvested from the Warriston site. Plot holders are welcome to send in recipe ideas for seasonal Warriston produce. Where possible, aim for topicality by sending recipe ideas at least one month ahead of the harvest time of your main recipe ingredients.

2018 has been a fantastic year for apples. This is an easy and quick way to use up some of this year's bumper crop. I use Bramleys as the cake mix is quite sweet so a slightly tart cooking apple works well.

Courgette fritters

If you grow courgettes it goes without saying that you will have a glut. And in this year's heat they're multiplying even more than ever. Pick them young and use its sweet and subtle flavour and soft, creamy texture in chutney, steamed with butter, in stir fries, ribboned and marinaded in lemon juice and olive oil or in an unctuous ratatouille. Or, try these delicious, quick and easy fritters.

For those who already have some mature herbs on the plot, and at a time when there is little harvest to be had, a small picking of fresh herbs feels like spring. Use any varieties (apart from rosemary and lavender which are both too strong) them in this simple recipe.

Roasted purple sprouting broccoli
High above the snow, broccoli is still sprouting a tasty crop of purple goodness. Stir frying or steaming is the most commonly used cooking option for this brassica, but this super simple oven cooked version brings a rich tenderness to tougher stems.
