September 2019—Bramble Muffins

A glossy bramble from the plot can be popped in the mouth for a burst of wine-red juicyness any time of day. With a handful of berries you could make some tasty seasonal muffins—delicious with an afternoon cuppa. Easy and fun for adults and children who like to pick and bake.

Makes 12 bramble muffins. You'll need a muffin tray and 12 paper muffin cases.
 
Ingredients:
  • 125g fresh brambles (aka blackberries)
  • 300g plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 eggs, beaten
  • 75g caster sugar
  • 225ml milk
  • 100g butter melted and cooled

Method: 
  1. Preheat the oven to 200C/400F/Gas Mark 6.
  2. Place the paper muffin cases in the muffin tray.
  3. Sift the flour, baking powder and salt into a large bowl.
  4. In another bowl, mix together the beaten eggs, sugar, milk and melted and cooled butter.
  5. Return the dry ingredients to the sieve, then sift them into the egg mixture. Quickly fold in the flour—don't worry about the mixture not being smooth.
  6. Fold in the brambles.
  7. Now spoon the mixture into the muffin cases. Bake the muffins on a high shelf in the preheated oven for about 25mins until risen and golden.

These are very tasty still slightly warm from the oven with some a little crème fraiche or vanilla yogurt.
