​Leekcakes


<Index
Another seasonally inspired easy recipe for a quick and tasty savoury snack, a good accompaniment to cheese: sent in from a west side plot holder. 
 
Ingredients and method:

4 cups of leeks, chopped finely
 
Cook in a little butter till soft
 
Remove to a bowl and cool
 
Add 2 eggs, 1 cup flour, half a teaspoon bicarb, one and a half cups milk, a pinch of salt and stir. Add herbs and flavourings to suit.
 
Cook as drop scones* in a little olive oil or butter. Best served warm. ST
