Courgette Soup

Thanks to Esme for another tasty allotment recipe. What is the collective noun for courgettes? A mob? Those of you struggling to keep up with these rampant curcurbits might find this one helpful.
This soup is super easy. It also freezes well, so in a couple of months, when the courgette glut is a distant memory you can still enjoy a taste of summer!

Ingredients

  • 450g courgette
  • 60ml olive oil
  • 1 large onion
  • 1 clove garlic
  • 725ml stock
  • 60ml parsley
  • Pepper to taste

Method

  1. Slice courgette. Chop the onion and crush the garlic.
  2. Heat oil in large pan on a low heat
  3. Stir in onion, garlic and courgette and simmer for 10 mins
  4. Pour in stock, bring to the boil. Add parsley. Cover and simmer for 15 mins.
  5. Remove from, season with pepper then blend until as smooth as you want it.
  6. Reheat if needed – enjoy!
