Chris's Broccoli, Stilton and Pistachio Soup

Thanks to an east side plot holder for this hearty soup recipe.
Ingredients:

  • 1 onion finely chopped
  • 1 stick of celery finely chopped
  • Small piece of turnip finely diced
  • 1 floret of Broccoli
  • Handful of pistachio nuts (unsalted) chopped fine
  • 1-1½ ltrs of good vegetable stock
  • 150g Blue stilton cheese

Method:

Cook onions and turnip in some oil and a wee bit butter. Put Broccoli in, give it a wee mix for 5 mins, then add stock. Cook this off and once the broccoli is cooked blitz in the blender… Pour back in the pan add pistachios and cheese..

Once cheese is melted – EAT IT
